Well folks, this brings me to the last class of cakes for the time being. One of the most anticipated classes for me since I'm so scared of the dreadul sponge cake!! Yep, big ole silly me scared of a soft cushiony type cake that I love to savour....
The last few times I tried making sponge cakes at home turned out to be disasterous. Instead of me having a nice spongy cushion, I had a dense pound cake instead... No matter what I did I never mastered it and gave up making my favourite cake - black forest.
Now... I think I would be able to whip up one that I could eat all by myself (erm... if I have to share then I'll make two.. ). For those that were told the old wifes tale of not knocking the cake mixture and slamming the oven doors or opening it up too early... well I'm afraid those rules APPLY.
In my opinion, the emulsified sponge was the most easiest and fool-proof recipes I would use in the coming future...
My apologies as no pictures were captured during this class... was too busy stuffing everything down to preserve a shot.
Next week is when yeast meets east...
